I wanted to thank everyone that came to my class this past Saturday. The recipe I promised you is on my blog , purslane tabbouleh. For all that have never heard of purslane it is a sprawling succulent you have probably seen in your yard, and it has more omega 3’s than any other green! I was so worried that I could not find enough of the super-weed purslane outside to forage, and my seed had sprouted, but not enough to come up with for a class. I was on a mission to find enough to come up with a recipe for you all, and Voila! To my surprise a farmer from the Pontiac market called me and had a huge bunch! I decided to make tabbouleh with it and I am so glad I did. Everyone loved it!
I showed the class how to make the bitter dandelion green into a yummy salad. How to pick and store grape leaves, and make a healthier version of vegetarian stuffing. Also, of course, the superfood of the bunch purslane! So glad you all got to sample it.
