Avocado Toast. It’s All The Rage!
I can’t stop making it. For breakfast, lunch or dinner! So filling and amazing! The toast is Ezekiel. I don’t eat much bread but this is a healthier option. Sprouted, high fiber and really good. I used the sesame one here. Toast the bread with a little coconut oil.
Cut a half of a ripe avocado and mash with a little celtic sea salt.
Top it with a soft-boiled egg (pic above) or a pouched egg (pic below) and voila! An amazing healthy meal!
The top photo is the PERFECT soft-boiled egg. 6 1/2 minutes. Boil the water, drop the egg in gently. Set your timer for 6 1/2 minutes. Take it out and put in an ice bath for 2 minutes (bowl with ice water) Remove the egg and peel from the bigger end of the egg where the air pocket is. The shell should come off easily. Cut in half and add it to the avocado toast.
If you have never poached an egg it is so easy (pic below) and it looks so pretty doesn’t it?
Just crack the egg in a small bowl and slowly add to a pot of low-simmering water. Time for 3 minutes and remove with a slotted spoon. You may have to trim the egg white a bit like I did here to make it soooo pretty 🙂 I hope you make this fancy avocado toast at home. Impress your friends for brunch or just impress yourself!
